Saffron

Saffron or Zarparan (scientific name: Crocus sativus) is a plant from the lily family, saffron family, and is the most expensive spice in the world, which is used in cooking. Zarapran onion has a brown skin that protects it. After the onion of this plant is planted, the growth process begins and a stem (crown) is formed and a bud is put on its head. The stigma and crimson color of the saffron flower are harvested and after drying, it is used for seasoning and coloring food.

 

Sargol
There is no cream or root in Sargol saffron and the red stigmas are separate from each other. This type of saffron is the purest type of saffron and its coloring is between 210 and 260. Sargol is one of the most widely used types of saffron in the Iranian market.

In Negin saffron, three branches of the red stigma are separated from the yellow part of the cream and voluminous saffron is prepared. Negin saffron is considered one of the most expensive types of saffron due to the time-consuming and expensive processing process. It has the highest coloring power, which is between 230 and 270.

Pushal
Pushal saffron is the red stigma part of the saffron thread plus one to three millimeters of the yellow part of the cream. The coloring power of Pushal saffron is 170 to 250. This type of saffron is trusted by most consumers due to the connection of stigma and cream and reducing the probability of acceptance. String saffron belongs to Pushal saffron group.

Saffron is a valuable and expensive commodity, this high price motivates profit-seekers to cheat and manipulate it. Adding flower color (a plant similar to saffron with coloring properties) or coloring corn cobs is one of the most common methods used for fraud. Also, adding oil, candy, honey, sugar and salt to saffron in the form of a spray with the aim of increasing the volumetric weight (mass) is another one of these methods.
